These pancakes are really good. Don't let the wheat bran throw you off. Back in Junior High, about 8 years ago, I took a Nutrition Science course. I had to come up with a recipe that used wheat bran. I came up with these. I haven't made it in awhile so I apologize, I don't remember how many pancakes you get out of this recipe. But here it is.

1 C. buttermilk
1 lg. egg
1/2 C. wheat bran
3/4 C. whole wheat pastry flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 T. sugar

mix milk & egg, then add dry ingrediants. Stir with a wire wisk just until mixed. Then cook as you would regular pancakes.

Each serving is only 100 Calories.

they are really good. It was very hard for me to come up with a recipe using wheat bran that actually tasted good. The first recipe I made w/ it was wheat bran muffins. They tasted and smelled like fish food. Even the teacher thought so.

I finally came up with the pancake recipe. (I was a Jr. in highschool not in junior high. sorry.) After I had made the first pancake, I was a little skeptical. I thought they were going to taste bad like the muffins. Boy was I ever surprised! They were really very good!

I have made them many times and everyone who has tried them has liked them.

For me, it is very rare there's healthy food that actually tastes good.
