Does anyone have a recipe for frozen bananas?

I'm going to slice chunks of bananas and dip them in chocolate....(melted bakers chocolate, I guess - do I put butter in the chocolate?) then put them on a tray, maybe sprinkle crushed nuts on them and freeze them.

What am I missing?

CHOCOLATE-COVERED FROZEN BANANAS

4 ripe bananas, peeled
8 wooden Popsicle sticks
1 tablespoon vegetable shortening
6 ounces semisweet chocolate chips or butterscotch morsels

Cut bananas in half crosswise. Insert wooden stick in end of each and freeze. Melt over hot (not boiling) water in double boiler chocolate or butterscotch morsels. Stir in shortening. Coat each banana piece with melted morsel mixture. Wrap each in aluminum foil and place in freezer. You may also roll bananas in chopped nuts, shredded coconut or oven-toasted rice cereal.

Tree, Kittypal's recipe looks good. You definitely don't want to use melted bakers chocolate as there is no sugar in it and it would be extremely bitter. Use either the melted chocolate chips or you can get bakers bars that are semi-sweet (or even milk chocolate). Adding the vegetable shortening helps the chocolate to better adhere to the banana. Yum!!!!!

I think that's where I went wrong. I didn't freeze the bananas first! They turned out.... um..... well, they didn't!

The chocolate was too thick and the bananas resisted the coating...... Roll Eyes

OOPS.. hey Lydia! I used butter, but I suppose veGie oil is the way to go! I like semi sweet chocolate. The baker's seems fine, it's just the coating I had problems with!!!

Next time, I'll try your suggestions!

I emailed a chef that I know and this is what he says:

Howdy,

My suggestion would be either to temper the chocolate first (a real pain in the you-know-what) or make a ganache. If you just melt the chocolate and then dip and freeze, the chocolate will be almost impossible to bite into, (unless you got a real good pair of chompers). If you make ganache, the chocolate will still be hard but it will be much nicer to eat.
Easy to make.......

Ganache:

12 fl oz (355 ml) whipping cream (liquid form)
11/2 oz unsalted butter ( I always use regular)
1 1/2 oz caster sugar (very fine..sometimes called berry sugar..again I have always used regular)
12 oz (340 gr) chocolate......small pcs

Heat cream, butter & sugar.....bring to a boil
Pour this mixture over the chocolate in a stainless or glass bowl.
Cover with saran wrap & let stand for 5 min, then stir.
It's ready for dipping.

ooh, I totally forgot until just now, my brother used to be a health nut and he would NEVER eat ice cream, but he did freeze bananas and then dip them in fat-free pudding, he said it was better than ice cream!! (somehow I doubt that, but still good)
