My Grandmother was an amazing cook and she couldn't taste after she had Chemo (for another 20 years or more). She never used recipes, she just took a pinch of this and a splash of that. My Aunt made it a "Goal in Life" to measure everything before Grandma added it and so she made the recipes so that was can enjoy them now. Grandma made this Pumpkin Custard which is out of this world. I hope you enjoy it as much as we do. Truly the taste of Memories.


Grandma's Pumpkin Custard


1 and 1/2 c mashed pumpkin
3/4 c brown sugar
4 T all purpose flour
4 large eggs
1 t ground ginger
1 t allspice
16 fl ounces whole evaporated milk
1 quart whole milk (you won't use all this milk)
1/8 t salt
pinch cinnamon
pinch nutmeg

Preheat oven to 400 degree F.

Take 1 can evaporated milk, put into a quart container. Add whole milk to the evaporated milk to make an even quart.

Mix pumpkin, sugar, salt, flour and spices. Beat eggs until frothy, add to mixture. Mix. Add Milk. Mix. Pour into pre-prepared unbaked pie shells (makes about 2 pies). Sprinkle with cinnamon and nutmeg.

Bake in 400 degree oven for 15 minutes, then decrease Temperature to 300 degree and continue baking for 40 minutes. Pie will NOT be set. It will set as it cools.
