New York Cheese Cake

24 oz cream cheese
12 oz sour cream
2 Tbsp corn starch
1 cup sugar
1 tsp vanilla extract
3Tbsp lemon juice
4 whole eggs

Use all ingredients at room temperature! Cream everything together until very smooth. Pour into a 14 inch springform pan. Bake at 375 degrees for 1 hour. Remove from oven. Let come to room temperature before removing from the pan. Chill and serve. Very good served with fresh fruit or store bought pie fillings.

This is always our desert after Christmas dinner. I make it with a graham cracker crust and top it with a blackberry sauce made with frozen blackberries, sugar and cornstarch. Any sauce left over can be used as preserves.
