We have been wearing poppies for some weeks here in Britain, in anticipation of the anniversary of Armistice Day , November 11th, 1918.

Why then do some local war memorials bear the dates 1914 - 1919 ?

Following the Armistice of November 1918, a "Cenotaph" ( empty tomb in Greek) is unveiled in London" in july of 1919. There was a parade on the first Peace Day Celebration.

It would become a permanent monument to salute the fallen and commemorate the Allied victory.

Is it because the war didn't officially end until the signing of The Treaty of Versailles in 1919.

Yes, June the 28th, 1919.

Some separate treaties were signed later yet.The treaty with Hungary was signed in June 1920, that with the Ottoman Empire in October 1920 and that with Turkey,a new treaty necessitated by the Turkish Republic emerging from the wreck of the old empire, in 1923.
