I usually prefer to eat my vegetables raw, but the other day I made roasted veggie enchilada's per Lydia's recipe and when I was done cooking the vegetable part I tried them and was surprised to realize that I liked it!!
I don't think I could convince my family to eat JUST roasted veggies though...does any one have any recipes that involve USING roasted veggies? ______________________________________
11-08-02, 11:30 AM Sandy I like to put them on top of some scallops. Add a little wine(in the recipe AND in the glass)and drizzel some grated cheese (your favorite kind) cover with foil and bake about 15 minutes in a 400° oven. It is wonderful!!
