1 lb firm or extra-firm tofu 1 tablespoon light olive oil 1 teaspoon sesame oil 2 tablespoons honey or maple syrup 2 tablespoons soy sauce 2 tablespoons dry red wine or sherry
Cut the tofu crosswise into slices 1/4 inch thick and blot with a piece of kitchen towel. Combine the oils, honey, soy sauce and wine or sherry. Heat slowly in a frying pan. Add the tofu slices and immediately turn them over so that they are fully coated in the liquid. Fry over a moderate heat until the underside of the tofu is crisp and golden. Turn the slices over and repeat. Serve immediately.
