These are sooooooo good, and as you can see by the ingredients, COMPLETELY healthy. Big Grin

2 lb. bag frozen hash browns
1 1/2 sticks butter or margarine
1 1/2 cups cottage cheese
1/2 lb. aberican or Velveeta cheese, shredded or cubed small
1 onion, minced fine
1 pint half-and-half, brought just to a boil

Mix all well and pour into a 13x9 baking dish. Bake at 350° for one hour. You can also add a cup of diced ham to this or a dash of cayenne pepper for a kick.

This sounds excellent and hearty, especially with the ham option. I think I'd be using more than a cup of ham though

If you add a lot of ham giz, either cut out some of the taters or put this in a bigger baking dish. I did it with just the potatoes alone and it was just to the top of my baking dish. It was a good thing it couldn't rise! Smile Taters everywhere!!!
