Method:
Clean potatoes; do not peel. Cut into ¼-inch thick slices. In clear plastic bag, combine Parmesan, parsley, salt and pepper. Add potatoes; shake to coat. In small bowl, combine butter and oil; spread over large baking sheet. Spread, coated potatoes over butter mixture in single layer. Bake in preheated 400F oven turning once or twice, 35 to 45 minutes, until golden and crisp. Makes 4 servings.
