This take a little bit of prep, but it is delicious! It would complement just about any side.
Island Rice
2 cups hot cooked rice 1 11 oz. can mandarin orange segments 8 oz. can crushed pineapple 1/2 cup red peppers, chopped 1/2 cup slivered almonds, toasted 1/2 cup coconut, toasted 1/2 cup green onions, sliced 2 tbs. mango chutney 1/4 tsp. ground ginger
Combine rice, pineapple, oranges, red pepper, almonds, coconut, green onions, chutney and ginger in large skillet over medium-high heat.
