I found this recipe on an Atkins site, but altered it a bit (instead of cheddar cheese, I used Gruyuer Cheese and I didn't use frozen veggies...I used fresh)...it was SO good!!
2 16 oz bags of fresh spinach 1 large bunch of fresh kale 3 eggs 1 cup sour cream 1/4 tsp nutmeg salt & pepper 8 oz gruyuer Cheese grated
clean and remove all stems from spinach and kale and tear into pieces...place in large pot with an inch or so of salted water in the bottom. Cover and cook until tender (10 minutes or so after boiling. Place in strainer and run under cold water to cool. Squeeze excess moisture.
In large bowl...combine beaten eggs, sour cream, salt & pepper and nutmeg...add the kale/spinach and mix till well coated. Place in buttered baking dish and top with shredded cheese.
Bake at 350 degrees (F) for about 45 minutes or till hot & bubbly!!! ___________________________________________
02-24-04, 03:15 AM Tractor Alright, we made this and it was absolutely awesome! Now there's another regular item added to the household menu. The only question I have is...Why doesn't the recipe call for any mushrooms?
