8 red potatoes, boiled and cut into 1/8 chunks (boil them whole and cool for a bit, then cut them) 3/4 cup Italian salad dressing 1 yellow onion, grated 1 cup celery, diced 2 cups kosher dill pickles, diced Salt and pepper to taste 6 hard boiled eggs, diced 1/4 cup yellow mustard 1/2 cup mayonnaise 1 Tbl fresh parsley, finely diced 1 Tbl fresh basil, finely diced 1 Tbl paprika 1 Tbl fresh dill, finely diced
Combine potatoes, salad dressing, onion, celery, pickles, salt and pepper. Cover and refrigerate for at least 2 hours.
Afterwards, add eggs, mustard, mayonnaise and mix well. Finish by sprinkling with fresh herbs. Garnish with fresh dill.
