Does anyone have any recipes for vegetable casseroles? My veges are getting a little boring!

Broccoli Casserole
(great for a pot-luck dish)

8 oz. Velveeta Cheese
2 Packages (10 oz.) of frozen chopped broccoli
1 Sleeve of Ritz Crackers, crushed
1.4 lb. melted butter

Cook and drain broccoli. Place l/2 of broccoli in 1 & 1/2 qt. long pyrex dish. Place half the slices of Veleveeta on top broccoli. Repeat with the rest of the broccoli, and another layer of remaining Veleveeta. Brown crushed crackers in butter and spread on top of casserole.
Bake at 350 for about 25 mins.

6 C. Yellow squash(sliced)
1 Med. Yellow onion(cut in half and sliced)
1 Can cream of mushroom soup
1 C. sour cream
1 4 oz. can of chopped chilies
1 6 oz. package of seasoned cornbread stuffing
1 C. chedder cheese(grated)
Bring 1 cup of water to boil, add squash and onions. Return to boil, cover and reduce to simmer. Cook until tender crisp.(about 6 min.)
Drain well.
In a bowl combine soup, sour cream and chilies, add seasoned stuffing, mix well. Stir in squash and onions. Spoon into a greased 2 qt. casserole and top with cheese. Bake in a 350 oven for 30 minutes. Until heated through and cheese is melted. Let stand 10 min. before serving.
