PREPARATION: 8-10 MINS
COOKING: ABOUT 1 HOUR
sERVES 8

1.5kg(3lb 2oz) Disiree potatoes, peeled
200ml(7 fl oz) sunflower oil
4 tbsp mustard powder
3 garlic bulbs, with cloves separated (not peeled)
3 tbsp rosemary leaves
sea salt

1- Preheat the oven to 200'c (400'F,gas 6).
Cut potatoes into large chunks and boil in lightly salted water for 10 ins. Drain, return to pan, then cover and shake pan to make them fluffy (this will help them crisp during roasting).
2- Pour the sunflower oil in a roasting tin and place in the oven for 8-10 mins.
Toss the potatoes in the plain flour and mustard, add to tin, then turn in the oil and sprinkle over the garlic cloves and rosemary leaves. Season, then roast for 40-45 mins, basting occasionally, until golden.

Tried and tested! These are lovely!
