2 1/2 cups shreeded peeled baking potato
1 1/4 cups shredded parsnips
1 1/4 cups shredded peeled sweet potato
1 tsp salt
1 1/2 cups chopped onion
1/4 cup all purpose flour
1/2 tsp pepper
2 large eggs
vegetable oil for cooking

Combine first 4 ingredients in a colander lined w/paper towels. Let stand 20 mminutes. Drain and squeeze excess moisture from potato mixture. Transfer to a large bowl and add onion, flour and pepper. Toss well and stir in eggs.

Heat a small amount of oil in a large nonstick skillet over med-high head. Spoon 1/3 cup batter for each latke into pan. Cook 4 minutes on each side till browned. Repeat adding oil and cooking latkes.

Serve with Cran-Apple Relish (if desired)

Cran-Apple Relish
5 cups chopped peeled cooking apples
2 cups fresh cranberries
2 cups water
3/4 cup packed dark brown sugar
1/2 cup white vinegar
1/4 teaspoon ground cloves
1 3" cinnamon stick

combine all ingredients in large saucepan. Bring to a boil. Reduce heat and simmer one hour - stirring occassionally. Continue to cook until thick. Discard cinnamon and mash with potato masher. Cover & Chill

Okay, what exactly is a Latke? I'm picturing a foreign guy who drives a taxi and that can't be right...
