This may seem like a silly request to some, but I can't remember how to cook pinto beans, that is what type of spices do you use? If anyone could please give me a recipe for this I would greatly appreciate it.
Thanks,
Jeebergal

My Favorite bean....
Being borne on the Mexican Border, I was eating Pinto beans before Gerber baby food...(well, almost)

Salt- go easy till almost done..salt will sneak up on you real quick...
Pepper- to taste of course.
Garlic-Fresh, aabout 4-6 cloves for me..maybe less for you.
Small ham Hock....

And now, the real secret ingrediant: Chilie Powder.... About 1 1/2 to 2 tablespoons... Don't worry, you won't taste it, but there will be a flavor that only comes with CP...
DO NOT COOK ONIONS WITH THE BEANS !!!!
When serving the beans , have a small bowl of finly diced fresh onions to sprinkle on top....

Don't forget to serve homemade Cornbread with it...

Yummmmmmmmmmy....

There are so many ways to prepare pinto beans. Try many to find the one you like best. Here's what I like to do:

Pinto Beans

1 lb pinto beans - dry
1 med smoked ham hock
1 med onion - chopped
1 clove garlic - minced
1 rib celery - chopped
1/2 med bell pepper - chopped
2 tsp chili powder - or to taste
2 tsp oregano
1 tsp cumin
crushed red pepper - to taste
salt - to taste
pepper - to taste

Rinse and pick through beans several times to remove dirt, rocks, etc. In a large dutch over, cover with water and bring to a boil. Boil 2 minutes and shut off heat. Allow beans to sit for at least 2 hours. Beans may also just be soaked over night in cold water after washing.

Add all remaining ingredients except salt and pepper and bring to a boil; simmer covered until beans reach desired tenderness, approx. 1 1/2 hours. Add water as needed. Salt and pepper your beans in the last few minutes of cooking.

You really can substitute anything in this recipe but the beans. Some people prefer a few slices of bacon to the ham hock. If you're a vegetarian, you could try a couple tbs of oil instead of meat.

Just have fun and experiment! And may I say welcome to the pool, jeebergal. Hope you enjoy the water!

Here's one I found...

1 lb. dried pinto beans
1 med. onion, quartered
2 tsp. salt
1/2 lb. ham hocks or salt pork, cut into cubes
5 c. water
1 clove garlic, minced (optional)
1 tsp. chili powder
1. Soak pinto beans overnight in water to cover; drain.

2. Combine beans, water, onion, garlic, chili powder, salt and ham hocks or salt pork in large pot. Bring to boiling; lower heat; simmer over low heat 2 1/2 hours, or until beans are very soft. Remove ham hocks before serving.

Welcome to the pool jeebergal!! Wink
