Easy Apple Coffee Cake

Ingredients:

¾ cup butter, margarine or shortening
¾ cup granulated sugar
1 egg
1 tsp vanilla or almond extract
1 ½ cups all-purpose flour
2 tsp baking powder
½ tsp salt
½ cup milk.
3 medium McIntosh or other cooking apples, peeled, sliced

Topping:

½ cup brown sugar
3 tbsp all-purpose flour
1 tsp cinnamon
1 tbsp butter or margarine, melted
½ cup chopped walnuts, pecans. or almonds (optional)

Method:

Cream butter, margarine or shortening with sugar and egg until fluffy. Add vanilla or almond extract.
Blend dry ingredients. Stir into creamed mixture alternately with milk.
Transfer batter to greased 9-inch square baking pan.
Top with rows of apples.
For topping, combine ingredients until crumbly. Sprinkle over apples.
Bake in preheated 375F oven
35 minutes or until done.
