I would love a good recipe for coconut cake and frosting! Thanks!!

Coconut Bundt Cake

1 (18.25 oz.) box white cake mix
1 (3.4 oz.) package coconut cream flavor pudding mix
4 eggs
2 TBSP vegetable oil
1 cup cream of coconut
3/4 cup milk
2 cups shredded coconut

Preheat oven to 350. Combine cake mix, pudding mix, eggs, oil, cream of coconut and milk on low speed for 30 seconds, then beat on medium for 2 minutes.

Fold in coconut and pour into greased and floured 12 cup capacity Bundt pan. Bake for 1 hour, or until cake tests done. Cool cake and ice with Chocolate Glaze.

Chocolate Glaze

6 ozs. sweet baking chocolate
Scant 1/3 cup heave cream
2 TBSP. corn syrup
1 TBSP. sugar

In small saucepan, melt chocolate, cream, corn syrup and sugar over low heat until blended. Remove from heat and cool slightly.

This is a great recipe book for those who are either learning to cook, or wanting to bake quickly and simply. All the recipes start with packaged mixes and then you spice them up. I have used several of the recipes and have yet to find one that failed to get a recipe request.
