this is SO easy and really good.....it's really a seasonal item.....

2 8 oz packages of white chocolate chips (or white choc chunks)
8 candy canes or red & white peppermint sticks
5 drops of peppermint oil or extract (not "flavoring")

Melt the chocolate (can be done in a double boiler or even just in the microwave - if microwaving, do 30 seconds at a time and stir in between - do not let the chocolate just sit & boil!).

Place candy canes in a locked plastic bag and crush them fine - about the consistency of crushed ice.

Once the chocolate is melted, stir in peppermint oil and all but 3 tablespoons of crushed peppermint. Spread mixture out onto a cookie sheet about 1/4 inch thick. Sprinkle the remaining crushed peppermint over the top.

Refrigerate for 1//2 hour (or leave at room temp for an hour or more). When completely cooled & hardened, break into pieces.

This will keep in a closed container for as long as 2 weeks.

I've used everything from really good white chocolate blocks to nestles white chips - - they were all equally good.....
