A friend of mine mentioned that in the Chicago area they make delicious Swedish Flop Cakes. The only thing I come up with is Swedish Panckaes. Would Swedish Flop Cake be the same thing or close to it? I am not sure because I have actually never heard of the flop cake before. I'm sorry I wasn't of much help. Perhaps someone on this site has a recipe for the swedish flop cake you are talking about. 05-11-03, 03:05 PM Sugar Hi. The swedish flop cake is so easy to find in Chicago.(even at the jewel!) There are several bakeries in the andersonville and northpark hoods that have them, even Gladstone park bakery. The cake is a simple heavy yellowcake that has strawberries(glazed) in the middle with whipcream and powdered sugar and streusel topping up on it when its done. Jersey-i looked for about 15 minutes and could not find one for ya. I don't think its authentically called "swedish flop" either. Its just like a shortcake but two layers are "flopped together to let the whip ooze out the sides.

Hello, I am originally from Chicago and have tried for over 20 years to get the recipe that Roeser's used for their swedish flop. I used the search thru google with(recipes for 'swedish flop') and I found a few. I also found the true recipe for apple slices like the ones made at Roeser's bakery too by using the same search parameters.
Swedish Flop Recipe
1 pkg. dry yeast 1/4 c. warm water 1/2 c. butter or margarine 2 c. sifted flour 1/2 tsp. salt 2 egg yolks, beaten 1/4 c. milk, scalded and cooled to lukewarm 1 tsp. vanilla
Dissolve yeast in warm water. Meanwhile cut butter into flour, mixed with salt. Add the yeast dissolved, egg yolks, milk and vanilla. Mix well; cover and refrigerate for 1 hour. Spread mixture in a well-greased 8-inch square pan; spread topping over cake. Cover and let rise in warm place for 1 hour. Bake cake in preheated 350 degrees oven for 35 minutes. Remove and cool. Split cake in half to make 2 layers; fill with filling.
Topping: 1/4 c. butter or margarine 1/3 c. brown sugar 1 tsp. ground cinnamon Mix ingredients until crumbly.
Filling: 3 Tbsp. flour 1/4 tsp. salt 1/2 c. milk 1/2 c. butter or margarine 1/2 c. powdered sugar 1 tsp. vanilla Mix together flour and salt. Stir in milk; cook, stirring constantly until thickened like paste. Cool. Beat together butter, sugar and vanilla until light and fluffy; then gradually beat into the cooled milk mixture. The milk must be cooled completely for this to work. Mixture should be creamy. ------------------- Dutch Apple Slices Recipe
CRUST: 4 c. flour 1 1/2 c. shortening 2 tbsp. lemon juice 1 1/2 tsp. salt 12 tbsp. water 2 egg yolks FILLING: 16 apples 2 tbsp. flour 1/2 tsp. nutmeg 2 c. sugar 1 tsp. cinnamon CRUST: Mix flour, shortening and salt. Beat egg yolks with lemon juice and water. Add to the flour mixture. Roll out part of the dough. Put in a large pan. Roll out remaining dough. Reserve. FILLING: Mix all filling ingredients. Spread over dough. Put remaining dough on top of filling. Bake at 375 degrees for 1 hour. When cool, cover with icing.
