Red Velvet Cake, recipe courtesy of Lydia1962

Here is a great recipe for Red Velvet Cake - it's the recipe from the Bubble Room on Captiva Island, FL (if any have been there..)

It's VERY RED...I guess it would be classified as a buttermilk cake...

CAKE:
2 1/2 cups self rising flour
1 cup buttermilk
1 1/2 cups vegetable oil
1 tsp baking soda
1 tsp vanilla extract
1/4 cup red food coloring
1 1/2 cups sugar
1 tsp unsweetened cocoa powder
1 tsp white vinegar
2 large eggs

FROSTING (mmmmmmm great frosting)
1 1/2 sticks (unsalted) butter softened
1 1lb box convectioners sugar
10 oz cream cheese softened
1 1/2 cups chopped pecans

To make the cake, preheat oven to 350F. Mix together all ingredients (cake ingredients) with an electric mixer. Spray three 8 or 9 inch round cake pans with nonstick coating. Pour batter equally into the three pans and bake for 40 minutes. Test for doneness by inserting a toothpick into center of cake. Cake is done if toothpick comes out clean.

ICING:
Mix cream cheese and butter until smooth. Add sugar and mix until smooth. Frost cake with equal amounts of frosting for each layer. Top with the chopped pecans (top and sides)......

I LOVE this cake!!!!!
(I think maybe I just love CAKE!!)
