2 1/2 c. cake flour
3 3/4 tsp. baking powder
3/4 tsp. salt
1/2 c. shortening
1 1/2 c. sugar
5 egg whites
1 tsp. vanilla
1 c. milk

Sift flour and add baking powder. Cream shortening and sugar until fluffy. Add unbeaten egg whites, one at a time. Beat after each. Add vanilla then add dry ingredients alternately with milk. Makes 3 layers. Bake in 375 degree oven for 20-25 minutes.

FILLING:

3/4 c. canned milk
1/4 c. water
3/4 c. sugar
1/4 c. dates
1/4 c. raisins
1/4 c. figs
1 tsp. vanilla
1/4 c. nuts

Place milk, water and sugar in heavy pan. Stir sugar until dissolved. Add dates, raisins and figs. Cook until thick. Cool then add vanilla and nuts. Put this between layers.

FROSTING FOR LORD AND LADY BALTIMORE CAKE:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 box confectioners' sugar
1 tbsp. vanilla

Put butter and cheese out so they come to room temperature. Beat in mixer; add sugar and vanilla. Beat until smooth. Use to frost cake and top with grated coconut.
