Chocolate Coconut Cherry Drops

1/3 c Vegetable Shortening
1/2 c Sugar
1 egg
1/2 tsp Almond Extract
3/4 c AP Flour
1/2 tsp Baking Powder
3/4 c Semisweet Chocolate Chips
1/2 c Shredded Coconut
1/2 c chopped Maraschino Cherries

Preheat oven to 325 degrees. Grease cookie sheet (I spray with Pam).

Cream shortening with sugar. Beat in egg, almond extract, flour, and baking powder. Add remaining ingredients and mix well.

Drop spoonfuls of dough onto cookie sheet and bake 15 to 17 minutes. Transfer to wire racks and let cool.

This recipe is tried, and proven. A nice blend of flavors. The cookies brown nicely at 15 minutes, and have a good texture. Definately a winner if you like chocolate, coconut and cherries.
