My husband and I got married in Kauai and we went back for our 1st anniversary. Since we just moved 1000 miles away from our "hometown" we won't be able to go this year. Instead, I ordered a DVD of Kauai waterfalls and I'm picking up some tuna to make sashimi and I will prepare kaluha pork. The one thing that will make the evening complete however, is mai-tai's. I have tried many recipes, and none of them come out just right. Any suggestions? Thanks.

A couple of points on a Mai-Tai...you should use two different rums...a light and a dark. I like Jamaican rum, but you could use something as basic as Bacardi - both the light and the dark.
1 ounce dark rum
1 ounce light rum
1/2 ounce Orange Curacao
1/2 ounce orgeat Syrup (this is an almond & orange flavored syrup, should be able to find it in a decent liquor store)
Juice from one fresh lime (about 3/4 ounce)

Most recipes will call for grenadine or sweet & sour mix Frown This could be part of the problem!!

I'd suggest making a pitcher of 'em!!

(if you can't find orgeat syrup - you can use a couple of drops of orange extract and almond extract, which you can buy in the spice section of the grocery store)

All of the recipes I have call for grenadine and sour mix, and it just doesn't taste right. Now I don't know if I can wait until my anniversary! Razz
