Bring water, sugar and coffee to a boil, reduce heat and simmer for two hours. Cool and add vodka and vanilla. Serve or bottle. _________________________

I've had this one for at least 25 years and make it once a year. You can use either Vodka or Brandy. (I use Brandy)
1 whole vanilla bean 4 cups sugar 2 oz. instant coffee 2 cups boiling water a fifth of either Brandy or Vodka
Dissolve sugar and coffee in boiling water. Let cool. Pour into large jug. (I use a gallon wine bottle for this) Add Brandy and vanilla bean
Seal in jug for at least 30 days. The longer you age this the better it is.
