1 (16 oz) can salmon, drained 1 egg, beaten 2 Tbsp parsley (chopped or dry) 1½ tsp salt 2 Tbsp butter ¼ cup ketchup 2 cups fine cracker crumbs ¼ cup milk 1 small onion, minced ¼ tsp cayenne pepper 2 Tbsp lemon juice
Preheat oven to 350* Drain salmon very well, put all ingredients into a large mixing bowl and beat on low until it is completely mixed. Form into 8 equal patties and place on a lightly greased baking sheet. bake at 350* 10 minutes on each side.
serves 8
This is good served with coleslaw, and french fries.
