Not having a functional grill, any suggestions as to how I might make these bacon-wrapped scallops with my electric stove? Pan fried? Broiler? Baked? Thanks!!

Basically, you are making a variation of rumaki. Any of the ways you ask about will work. If you are pan frying, use the same skillet for both the bacon and the final product. (Drain if too much grease, but the skillet should have a bit of grease in it.) Baking it will also work.
My suggestion:
Try all 3 ways with samples - baking, pan frying, and under the broiler. However, if I had to do it right now, with no time for trials, I'd pan fry it in a cast iron skillet, and give each piece a 60 second shot under a hot broiler.
If you are making apps, I'd use fat toothpicks rather than skewers. If using then as part of a meal, I'd stick with the skewers.

Thanks, Dorian. That’s pretty much what I was going to attempt. I use turkey bacon, so there aren’t a lot of drippings in the pan... I look forward to trying this now, though. Do you think it would work on a table top griddle like this, as well?
