One of the things I'm making for the game tomorrow: (my own concoction)
1 lb littleneck clams (about 14 clams) 2 8 oz bottles clam juice 2 6.5 oz cans chopped clams (with juice) 3 leeks coarsely chopped 1 cup white wine (Pinot Grigio) 3 medium potatoes diced 3 green onions chopped 1/2 lb small shrimp (raw) 2 Tbsp chopped fresh parsely 3 Tbsp butter Juice of 2 limes Juice of 1 lemon Coarse salt to taste Cracked black pepper to taste Crushed red pepper to taste
Melt butter in deep pan with lid. Add leeks and potatoes and cook over medium heat a few minutes. Add chopped clams and ALL the clam juice. Cook a few more minutes and add the wine and clams. Cover and cook until clams open up. Add shrimp, green onions, salt, pepper, and red pepper. Cover and cook until shrimp are pink. Squeeze in the lemon and lime juice, toss in the parsley, stir well and serve. Serves 2 to 3.
