I had some herbs that I just harvested to encourage more growth from my plants and I had planned on drying them. I had purchased some meat recently (in bulk) and was seperating it into various freezer bags. As an experiment I took one set of boneless chicken and lightly coated it with olive oil and pressed fresh rosemary leaves into the flesh of it. I did the same with some porkchops and sage leaves. Then I packed them away and froze them.

Anyone have any idea what affect this may have on the flavor of the meat, if any?

If you place the bags directly into the freezer, then nothing has happened yet. Freezing stops everything. The herbs and oil will cause the meat to marinate once it thaws. Note, fresh herbs are very delicate, and may turn dark and/or bitter when frozen. Freeze your meat plain and then choose to use fresh herbs in your marinade on thawed meat.

the only meat I have marinated frozen was a standing rib roast. What I do though is coat it all over with heavy garlic (fresh) and salt and pepper (between the ribs and meat to) tie it together and rub worcestershire all over it then wrap a few times in heavy duty foil. While defrosting it marinates itself. and then I slow roast it. Let us know how your experiment turns out.
