Sometimes the shells come off so easily, but isn't there a way to make all hard boiled eggs peel easier?

Wish I knew the answer to that. Sometimes the shell just falls off and sometimes part of the egg white comes off with the shell. Go figure.

After the hardboiled eggs cool off in the pan for approximately 15 minutes, allow them to stand in cold water for an additional 15 minutes. They should easily peel then or days later when removed from the refrigerator. They can last days in the refrigerator.

Although this method should work, if one too abruptly changes the temperature of the water or the environment surrounding the eggs, the method fails as the eggs crack and water seeps into them, a cause of peeling problems. Eggs are delicate and must be handled slowly with forethought.

Very fresh eggs won't peel well.
Age is the factor.

Nothing works unless the egg is at least 3 days old. Air absorbed through the shell separates the membrane enough to make peeling easier.

-Herman the egg man, Vineland, NJ.

We learned the hard way catering for 500. Salt. Vinegar. Temperature. Phooey. Depends on the age.
Too fresh won't work.

The semi-permeable shell breathes.

Old eggs have dented bottoms from too much air and make ugly hard-boiled eggs.

I never have a problem with egg peeling, fresh or otherwise, because I: Drop the eggs into iceed water right after cooking, leave them there for about 10-12 minutes, then crack the shells all around and under running cold water, peel them....comes right off ....What has happen, is that the hot eggs emershed into iced water creates a moister layer between sheel and egg..
Just as easy as peeling a sunburn.....

Like I said in my original posting, I can peel some easily and some shells come off with the egg white on them. From the same batch. I peel them all at the same time to make egg salad, so time and temp do not figure in. Go figure,,,again. confused

I've always found that if I bring the eggs to room temperature and then bring the water to a boil first THEN put in the eggs, they don't stick. Try that!

I recently saw this "bar" trick. Roll a hardboiled egg on the counter till it is cracked all over. Pull off a little bit of shell from the smaller end. Blow a BIG puff of air into the shell and it all comes off in one piece.

Let the eggs come to room temp. before you boil them, then prepare them as you normally would, when they are done, let them stand in cold water until they have cooled, they should all peel easily. I learned this from my mother-in-law, who had 7 kids. Easter was made much, much easier for all involved, the vats of potato salad she made were much, much easier with that trick, and every other thing that involved hard boiled eggs. big grin

It always works for me , crush the shell as you roll it across the counter and it should pull off in 2 easy pieces no problems at all.
