I really don't know what you'd call this. Some call it a skillet omlet, some call it a pizza. It is a hit with the guys I work with.
Pre-heat your oven at 375 degrees. Take a 15 1/4" cast iron skillet, fry one pound of sausage. Personally I like Jimmy Dean, hot sausage. Once it is fried, add 12 eggs. Scramble them up. Other things I like to add are sliced mushrooms, diced onions, green pepper, and jalapeno slices and grated cheddar cheese.
After everything is stirred up, put in the oven for 15 minutes. When I take it out, I put some american cheese on top and put it back in the oven for 5 minutes or until the cheese on top is melted good. Take it out of the oven, slice it up.
Goes well with any other of your conventional breakfast items such as fried bacon & biscuits.

SHAWN...How many burritos are you making that you need to freeze them? Oh it's just me I'm not a big freezer person. I like to make my breakfast burrito with a layer of home made refried beans, scrambled eggs, fried potatoes, chopped hot sausage, crumbled pepper bacon, grated jalapeno cheese, topped with fresh salsa, creme fraiche, and avacado. A good breakfast casserole a friend of mine makes is really easy and can be assembled the night before... Take several slices of sourdough bread and tear it in large pieces and layer it on the bottom of a large casserole dish. Cook a pound of sausage, crumble and layer on top of the bread. Mix a dozen eggs in a bowl, add chopped green chile, salt and pepper, tomatoes if you want, and pour on top of the sausage. Grate enough sharp cheddar to cover the top and cover and put in the fridge until morning. Bake at 350 for about 30-40 min or until eggs are set and cheese is melted. We are having a few friends over for Christmas breakfast too. Haven't decided on the menu yet. Have fun!
