I'm going through this weird phase right now I guess you could say, that every weekend I feel that I have to cook something completely new. Anyways, I have no idea what to cook and could use some suggestions. Nothing containing anything dairy, or ham... Help!

I perfer not to look on recipe books or websites because I prefer to have someone tell me that they make this specific thing and it came out good.

Why not try some of the "members' best" types of cookbooks sold by fund-raisers? I've bought several over the years and find the recipes in general very good. They're usually family favorites and so have had lots of tests! If you check with your favorite charities, I'm sure you'll find at least one good one.

Well, there's always haggis. It's lamb or mutton and oatmeal and onions, and in these decadent times there are even spices! And it's good! I had some in October 2004. Haven't had any since, though, you can't buy lungs in North America.

You'll need:

2 to 4 raw chicken breasts
1 to 2 pouches Taco seasoning
1 to 2 cans whole green chiles, julienned or diced (reserve liquid they're packed in, we'll call it 'chile juice')
1 to 2 T olive oil
Shredded cheddar and jack cheese (shred your own for best results)
Flour tortillas, 2 for each quesadilla (I use burrito size)
Diced jalapeno or serrano chiles to taste

Cut up raw chicken into half inch pieces. (cleanup is paramount here). Cook in skillet with 1 T olive oil over medium heat, about 10 minutes. Add Taco seasoning, green chiles, chile juice, and 1/2 cup water. Cook another 5 minutes and remove from heat.

Place a large clean skillet on burner and wipe with olive oil. Over medium heat place one tortilla in skillet and spread about 1/2 cup of cheese onto it. Randomly but evenly place some of the chicken mixture on the cheese along with some diced jalapenos or serranos to taste, and then sprinkle on another 1/4 cup of cheese and cover with another tortilla. In a few minutes check bottom tortilla for slight browning then flip with wide spatula. I use my other hand to hold the top when flipping. Brown other side slightly then remove to cutting board. Let cool a few minutes then slice into wedges. I use an Alaskan Ulu to cut mine. (I use it for pizza to. It's gotta catch on sometime!) Now cook more!

Cheese is dairy, so the chicken quesadilla is out, but I'll be using that recipe.

I can't remember if eggs and meat can be together, but this can be made without meat so...(Leppi, the cheese is optional, I'm just leaving that in for others)
Frittata is a versatile dish that can be served hot or cold, is suitable for preparing with or without meat and can be made a day in advance.
For each Frittata, you'll need:
2 tablespoons olive oil
1 clove garlic, minced (optional)
1 tablespoon minced or chopped onion (more if you like)
4 eggs, beaten
Seasonings to suit- salt, pepper, parsely, oregano

1/3 cup bread crumbs soaked in
1/4 cup water, broth or tomato juice

1 cup of "stuff" in bite size pieces- Cold cooked vegetables, cold (cooked) chicken, in whatever combination strikes your fancy. plus 1/2 a cup to 1 cup of grated cheese (optional, but very good)...- I get raves when I make it using onion,asparagus and chicken breast and fresh mozzarella.

Mix the eggs, "stuff"(If you're using cheese,hold back some for later), seasonings and soaked crumbs.

Heat the oil in a heavy skillet (must be oven safe) and cook the garlic & onion until tender then add the egg mixture... cover and cook over a low heat until it starts to pull away from the side of the pan... sprinkle reserved cheese over top and put under broiler for a few minutes (until cheese melts and top just barely begins to brown)...
Let it cool about 10 minutes, cut into wedges and serve... or transfer to serving plate, let cool completely and cover with foil or plastic wrap (if you cover it still warm, it can become soggy)
This dish reheats well in the microwave.
