I've noted in the last few years that Fried food in Takeaways has become inedible I know its not my age or taste changing
I believe that the "Fat" that cafe fry in is Now nothing like what it was say 20 years ago when they'd use Lard or dripping
Now the fry ups are very pale brown almost boiled! Taste vile and we pay top dollar for smaller portions Frown
Question... Has it been reduced to a small percentage of Fat and the rest is a chemical "wax"? To be safe(fire/safety regulations?) or are they robbing the Public? I think it's a bit of both Frown
Instead of pub crawling the latest thing is takeaway crawling for somebody who uses proper fat to fry with..and tastes right for a change Roll Eyes In reality have to take a risk on strange takeaways
TIP I've found that any town center shop always cook with the Glop (for speed)Mad so head out to the outskirts if you can...

Mike, with all of the health conscious people out there, alot of companies are making 'trans fat free' oils.

The casino I work at is now using 'Mel Fry Free Soy' oil. It is low linolenic soybean oil. so it is cholesterol free and low in saturated fats.

When you first try it, you notice a difference. Not enough to say "Eeew Gross!" and spit it out, but there is a subtle difference. And when you compare one cooked in regualr old oil and one cooked in the well, like the stuff we use, you can taste the difference. But all in all, it isn't bad. Afther the 2nd or 3rd time of trying it, you don't even notice the different flavor of the oil.

Ok. But you said in the last few years. I don't know what kind of oil they use there, where you live, but it could be the trans fat free oil. Yes, we get some people in the casino that do not like the oil and some regulars that have actually stopped ordering fried food.

I think it could be because it is a "new" thing. When people get used to one certain thing for a long time and then it gets switched on them to something totally different, it's hard to like or get used to.

Mike, they were wondering if you would notice that they finally dumped out their 20 year old lard and put the new lard in Big Grin

A lot of the trans fat free oils are fully hydrogenated. Partially hydrogenated oils have trans fats.
