While this is not a recipe, it is an article concerning chicken. Not really sure this is the appropriate place to put this but I felt it did merit a mention.

It discusses much of the bacteria found in chicken. Also it gives some tips on lowering the risk from contaminated chicken.

Thanks for the hot tips!

A few things not mentioned:

+ Avoid cooking with the skin, fat and bones whenever possible.

+ In addition to cleaning and sanitizing the cutting surface, be sure to do the same thing for any knives, tongs, etc. used - including instruments used all through the cooking process (spatulas, forks, probe-thermometers, etc.)

+ Don't re-use instruments for other food items during the cooking process.

+ Don't cook foods (potatoes, veggies, stuffing) in the cavity or in the same pan.


Aw hell....why not just give up chicken altogether!??? It's not like we can enjoy it anymore!
