I have never tried to do it this way, since it would be made with scrambled eggs. I always use fresh eggs and hard boil them and chop them up to make mine. roll eyes

Right-o Johnny me too, I was wondering if I scrambled them, let them cool and mushed them up with low fat mayo then added whatever if it would be more or less the same thing.

I did see a recipe once for "egg salad" using those egg substitutes - it stated you could make a quick egg salad that way - exactly as you stated - - scramble and let cool.....then do as you wish.

I tried it once with regular scrambled eggs - I didn't much care for the consistency - but you never know - - you just might like them.

Give it a shot - what do you have to lose?? smile
