I'd never heard of this, but after looking at several places I'm quite fascinated! Although no site I visited gave actual instruction, I can almost imagine how it's done from some of the pictures I saw....
It appears that the vegetables are sliced quite thin and then molded together in an appealing shape, using parchment as a form. The artist then uses shelac painted over the surfaces on both sides to seal them. I would imagine some veggies can be dried before shelac is applied, but since many veggies would shrink and fade in color when they are dried, my guess is that the fresh slices are molded and painted before they dry.
The products I saw are mostly for candles and state "not food safe", so this makes sense.
They are quite beautiful, and definitely something I would try!
