2 pieces of good quality sourdough bread
2 slices of cheddar cheese
1 tablespoon grated parmesan cheese
4oz. thinly sliced warmed roastbeef (I get this from a deli)
2 slices of tomatoe
1-1.5 tablespoons of 1,000 Island (recipe follows)
1 tablespoon melted butter

Preheat your skillet, or grill if you happen to have one. Take a little bit of the melted butter and brush on skillet or grill.(or use non-atick spray) Take the remaining melted butter, and brush one side of each piece of bread. (the side that is going to be grilled) Sprinkle the parmesan cheese on each buttered side. Lay paremsan side down, in the pan. Lay cheese on bread and top w/ the heated roastbeef. After a couple of minuets, carefully lift the sides of the bread and check for a golden color. When you reach that point, remove sandwich from the pan. Spread 1,000 Island on bread along w/ tomatoes. Enjoy! Smile

I cut the sandwich in half and I leave the tomatoes off of it until I am ready to eat that half. I don't like hot tomatoes so I put them on the side. When I am ready to eat the half, I place the timato on it and do so for the second half.

1,000 Island Recipe:

This is super simple and very tasty.
It makes more than enough for just this one sandwich so you'll have leftovers for something else.

1 cup mayo
1/2 cup ketchup
2 tablespoons pickle relish*.
1/4 teaspoon granulated garlic
worcestershire sauce to taste (it gives it a bit of a kick. I use about a 1/4 of a cup)

Mix all of the ingrediants together and enjoy Smile

*If you don't have pickle relish, but you do have some pickle slices or spears, just mince the pickles very fine. It'll work just fine. Smile
