2 cups drained, cooked garbanzo beans- can use canned, (If so, warm the beans slightly). 3 to 4 tbs. Sesame Seed Dressing -(below) 1 meduim avocado, peeled and diced 1/4 cup pimiento stuffed olives 1 cup torn fresh spinach leaves 4 pita bread rounds
Prepare Sesame Seed Dressing and beans if you are cooking them from 'scratch'.
In a medium bowl. combine beans, avocado, olives, spinach and dressing. Toss gently.
Cut each pita bread round in half and carefully separate sides of tthe bread to make a pocket. Stuff each pocket with bean mixture.
In a small heave skillet, stir sesame seeds over medium-high heat until golden. (3-5 min.) Set seeds aside. In a small bowl, combine vinegar, soy sauce, sugar, paprika, mustard, salt and onion. Stir to dissolve sugar.
Slowly add the oil while beating with a whisk. When all oil has been added, stir in toasted sesame seeds.
Makes abt. 3/4 cup of salad dressing.
