Mmmmmm...latkes....

My grandmother--who was Catholic, incidentally--used to make the BEST latkes in the world. Where she grew up everyone was Jewish but like her and three other families, so we'd eat all this stuff that was traditional sedar food or whatever at Christmas. Ah, America!

Do you think it would work with rice flour?

Is it necessary to drain the grated potatoes of excess water before combining?

ps A food processor makes the grating ez! First use shredder blade, then process. Leave grainy.

I've found with latkes or any other kind of fried potato thing that if you don't get the potatoes VERY dry they come out slimy.

I'm going to get some rice flour and make these! YUM!!
