6 Potatoes 2 Eggs 1 teaspoon salt 1/4 teaspoon pepper 1 small onion grated 2 Tablespoons flour 1/4 cup oil for frying
Peel and grate potatoes. Mix all ingredients together except oil. Pour oil into frying pan and heat. Drop potato mixture by tablespoon onto frying pan. Fry latkes until golden brown and then turn and cook other site. Serves 6. Perfect with applesauce. _________________________________
My grandmother--who was Catholic, incidentally--used to make the BEST latkes in the world. Where she grew up everyone was Jewish but like her and three other families, so we'd eat all this stuff that was traditional sedar food or whatever at Christmas. Ah, America!

ps A food processor makes the grating ez! First use shredder blade, then process. Leave grainy.
10-08-03, 11:53 AM MommyTimesTwo I've found with latkes or any other kind of fried potato thing that if you don't get the potatoes VERY dry they come out slimy.
I'm going to get some rice flour and make these! YUM!!
