1 pound boneless chicken breasts 16 oz. can crushed pineapple ¼ cup light soy sauce 1 kiwi, peeled and chopped 2 green onions, sliced 1/8 tsp. ground ginger dash ground red pepper
Cut chicken in 4 pieces. Drain pineapple, reserving juice. Bring juice and soy sauce to boil in large skillet. Add chicken, return to boil. Reduce heat, cover, and simmer about 10 minutes, or until chicken is tender and no longer pink.Combine remaining ingredients (including pineapple) in a separate saucepan and cook until warm, about three minutes. Remove chicken from soy sauce mixture. Top with pineapple mixture.
