I need a few low cal chocolate desserts. Something a kid would love. _______________________

"It's small wonder many people find they can't control their weight and eat desserts too. So many sweets are made with chocolate, and chocolate is over 50% fat and high in calories. I never use it in any form. I use carob instead. Some people don't think carob tastes like chocolate, but I maintain that when used correctly, it's difficult to tell the difference between the two. And this low-calorie chocolate taste-alike is only 2% fat. It's assets don't stop there. Carob contains no caffiene as chocolate does, and , because it has it's own natural sweetness, you don't have to use as much sweetner in the recipe as you do with chocolate, which is quite bitter in its natural state. The secret to successful use of carob is a light touch. Its flavor is much stronger than chocolate's I never use more than half the amount of carob I would if I was using chocolate."

Sift carob powder. In a medium-size saucepan, combine carob powder and water. Cook over low heat, stirring constantly, until smooth, about 6 minutes. Cool in refrigerator in a tightly closed container. Stir well before each use. Makes 2 cups, 12 calories / tbsp.
In the top of bouuble boiler set over boiling water, heat 1 1/2 cups of the skim milk. In a jar with a tight-fitting lid, shake together remaining skim milk and corn starch. Add gradually to milk in double boiler. Stir in honey. Cook until thickened, stirring constantly. Stir a little of the hot mixture into beaten egg. Pour egg mixture into hot milk mixture, stirring constantly. Cook another 2 minutes, stirring constantly. Remove from heat and mix in vanilla and carob syrup. Divide among 4 dessert dishes and chill
