There is some information here that might be helpful: Continuous high pressure carbon dioxide processing of mandarin juice: Mandarin cultivar 'Murcott' is harvested from January to March and has an excellent eating-quality. However, processing of juice with heat treatment causes undesirable changes in quality including off-flavor. Continuous high pressure CO2 pasteurization is an alternative method without altering the original quality of fresh juice. And this site shows step by step processing of orange juice. I figure the steps will be the same (or very close to the same) for Mandarine oranges.
