Can a man get an erection after having prostate surgery for cancer?

I've often heard that prostate surgery takes away a man's manhood. What does that mean, if it does not mean erections?

It usually means erections. And not all men lose their ability to successfully have sex after those sorts of surgeries. Some do, not all.

It depends in part on what operation is done, and in part on luck: impotence is a potential problem and must be recognized as such beforehand. But there are ways to try to prevent it. Also, if it does occur, there are treatments. Sometimes viagra and the like work. And there are operations, such as implanting a pump-like device that fills a reservoir in the penis; or there are devices implanted which maintain a constant partial erection. And there are more cumbersome devices, such as a suction pump that can draw blood into the penis and cause erection, after which a rubber-band like thing is placed at the base of the penis to maintain it.
