The temperatures in southern Ontario have been between 2C and -4C in the last few days. What crop benefits from this temperature range?"

( Mozart, you aren't allowed to answer Big Grin)

Brussels sprouts must, otherwise we wouldn't insist on their being picked in frosty weather . Smile

Just to clarify, this crop needs night time temperatures below freezing, and day time temperatures above freezing, Fred. Without these factors, there is no crop.
Brussels sprouts grow in temperature ranges of 7 to 24°C. They aren't a Spring crop here, and are harvested September to November.

Well done!
Over 80% of the world's maple syrup crop comes from Canada, and I believe, most of that is from Quebec.
Production is concentrated in February, March, and April, depending on local weather conditions. Freezing nights and warm days are needed in order to induce sap flows. The change in temperature from above to below freezing causes water uptake from the soil, and temperatures above freezing cause a stem pressure to develop, which, along with gravity, causes sap to flow out of tapholes or other wounds in the stem or branches.

We have quite a few maple syrup farms around here, and this weekend there is a festival in the town of Elmira, near me:
Elmira Maple Syrup Festival

Thank you, luckyladee for answering, ( and you too, MozartWink ). Please come and post on our Canadian news thread sometime. We need more participation from Canadians.Smile

When I was a kid , my parents had a chalet in the Laurentians ( few acres) mainly filled with Maple trees. I used to drill holes in them and attach the accessories to collect the "maple water" and later we would boiled that substance down to syrup or (boiling further more) " tire d'érable" Smile

We had snowmobiles to go around and collect that precious substance.
